Rough idea of itinerary.

Arrive Ulaanbaatar, arrange a car/horse and cart to take me and smurf the 350km to ancient capital of Kharkhorin (Karakoram) in the Ovorkhanghai province. Karakoram was an ancient palace and capital city of the Mongol Empire in the 13th century.
Ghengis Khan settled in this region sometime around 1220 and made it a command post for his military conquest of China.

From here I’ll get the bike ready and collect food/water for the push around the north eastern side of the Khangayan Mountains in Mongolias heartlands. To get the hang of the terrain, people and food/water situation, I’ll start slowly with the first stop being Tsetserleg about 100km away.
Circling the mountains, I’ll collect supplies and push onto Khorgo Tarkhiyn Tsagaan Nuur (lake) before taking my first major detour, heading south to cut through the centre of the range through Jargalant Galuutyn Canyon following the Baydrag River system to the southern edge of the range for some 300km. The river, like most rivers in Mongolia finishes by draining off under the sand as there is no ocean to flow into. This will be the big part of the trip, a very remote land with no major roads, just tracks and trails! How cool?
With any luck (!) I’ll pop out on the northern edge of the Gobi Desert a couple of weeks later.
